Eastern Carolina BBQ Chicken Sliders with Creamy Slaw

Makes about 15 sliders


Ingredients for chicken:

1 and 1/2 cups of crockpot shredded chicken (click for recipe)

1 cup of white vinegar

1 cup of apple cider vinegar

¼ cup of monk fruit in the raw

1 tbsp cayenne pepper

1 tbsp garlic, minced

Pinch salt and pepper


Ingredients for coleslaw:

2 cups of coleslaw mix (shredded cabbage and carrot)

3 oz non-fat Greek yogurt

¼ cup monk fruit in the raw

2 tbsp apple cider vinegar

Pinch salt and pepper


15 King Hawaiian rolls (slider size)



  1. In a small pot place the white vinegar, cider vinegar, monk fruit, cayenne pepper,  garlic, salt and pepper. Bring to a boil and reduce to a simmer.  Simmer for about 3 minutes and remove from heat to cool.
  2. In a small bowl combine the Greek yogurt, cider vinegar, monk fruit, salt and pepper. Mix to combine.  Add coleslaw mix and mix thoroughly.
  3. To assemble sliders:  Place shredded chicken on bottom roll, drizzle vinegar sauce on top and place coleslaw mix atop of chicken.  Place top of roll on top and serve warm.
