Makes about 12 servings. Prep time: 10-15 minutes.
To Assemble:
Place 1/3 cup of the lemon custard in a dish and top with 1/3 cup of the mixed berry compote. Place about 1-2 tablespoons of whipped topping on top of the mixture and top with about 1/2 tablespoon of roasted hazelnuts.
Ingredients for Sugar-Free Lemon Curd, makes 4 cups:
1/2 cup corn starch
3 large egg yolks, lightly beaten
2 tablespoons lemon zest
Pinch of salt
1/2 cup lemon juice
2 cups non-fat milk
1/2 cup non-fat Greek yogurt
1 cup monk fruit in the raw or 3/4 cup Splenda
Directions:
- Whisk the monk fruit and the cornstarch together in a medium saucepan. Add the milk and whisk until smooth. Add the egg yolks, zest, and salt and cook, stirring frequently at first and constantly towards the end, over medium heat until thickened enough to thickly coat the back of a spoon.
- Remove the pan from the heat and stir in the lemon juice and butter. Pour through a strainer into a large bowl, mix in non-fat Greek yogurt until well combined.
- Let cool to room temperature. Chill, loosely covered, for at least 2 hours and up to 3 days, or until set and thoroughly chilled.
Ingredients for Mixed Berry Compote, makes 4 cups:
1 cup strawberries, diced
1 cup blueberries, halved
1 cup raspberries
1 cup blackberries
2 tablespoons mint, chiffonade (cut into thin ribbons)
2 tablespoons monk fruit in the raw or 2 packets of Splenda
1 orange, zest and juice only
Directions:
- In a large bowl combine all ingredients together and mix thoroughly. Allow the flavors to meld together for at least 1 hour before serving.
Ingredients for Orange and Vanilla Bean Whipped Topping, makes 1 cup:
1 and 1/2 cup sugar-free and fat-free whipped topping
1 orange, zest and juice only
1/2 inch vanilla bean, split and scraped
Directions:
- In a large bowl mix together the orange juice, zest, vanilla bean, and ½ cup of whipped topping until well combined.
- Gingerly fold in remaining 1 cup of whipped topping until well combined.
