Roasted Red Pepper Hummus


Ingredients: (makes about 3 ½ cups)

  • 2 cups canned chick peas or garbanzo beans
  • 1 roasted red pepper, from a jar or can
  • 3 cloves garlic
  • ½ cup chicken broth
  • 1 lemon, juiced
  • 6 basil leaves
  • pinch salt and pepper

Place all ingredients except the broth in a food processor/blender. Pulse ingredients and slowly add chicken broth until desired consistency, may need to add more broth.
