Cut squash\u00a0in half, remove seeds, and roast cut-side down\u00a0with garlic and thyme inside. Roast\u00a0about 60 minutes or until soft. Scoop out\u00a0flesh and set aside, along with the garlic\u00a0and thyme. Add butter to a pan set over\u00a0medium-high heat; add onions and roasted\u00a0garlic and saute until soft. Add scooped\u00a0squash to pan and stir, then add wine to\u00a0deglaze. Reduce heat slightly and add broth\u00a0and bay leaf, then simmer for 10 minutes.\u00a0Remove bay leaf and puree in a food\u00a0processor; season with salt and pepper and\u00a0cider vinegar to taste.
