Make Your Lunch Choices Healthy and Delicious With New 500-Calorie Meals

Foods that we frequently eat can have a significant impact on our health. With that in mind, our Food and Nutrition management team has created new 500-calorie meal selections that will be available every week for lunch in the employee cafeteria at Cooper University Hospital, beginning this week.

“Each day, a balanced plate with a healthy nutrient profile will be prepared simply from fresh, wholesome ingredients,” says Maureen Scaramella, RD, MBA, Chef and Manager of Clinical Nutrition Services. “In season, many of our products will come from local farmers.”

Below is the 500-calorie menu* for the week of August 5, 2013:

Monday

Local Turkey Bolognaise Over Whole Wheat Penne (490 cal.) $3.25

Tuesday
Baked Vegetable and Cheese Frittata (240 cal.) $3.25
Steamed Broccoli (140 cal.) $.75

Wednesday
Baked Lemon Pepper Tilapia (330 cal.) $3.25
Basmati Rice (85 cal.) $.75 and Dill Carrots (65 cal.) $.75

Thursday
Roast Pork Loin With Pan Gravy (240 cal.) $3.25
Rizzoli Potatoes (110 cal.) $.75 and Green Beans (40 cal.) $.75

Friday
Grilled Chicken Marsala (190 cal.) $3.25
Garlic Mashed Potatoes (110 cal.) $.75 and Zucchini (60 cal.) $.75

“We hope that our 500-calorie meals will deliciously guide the Cooper community toward a more nutritious diet and better health,” says Scaramella.
